Flammkuchen



A little Alsatian pizza recipe. It's pretty simple, doesn't require much ingredients, and I'd say it's a lot easier to make than your generic tomato paste pizza a la Italia.

You just needs lots of creme fraiche, onions, and bacon bits. Of course you can replace the bacon bits, but if you want to be authentic about it, go for the bacon. I recommend it.

This is nothing for those of you out there, who don't like onions. This dish is just covered in onions (ideally).




What you need for the dough (adapted from thelifeingermany.com):
  • 400g of flour
  • 1 pack of dry yeast
  • Cup of water
  • Some olive oil
  • Salt
1. Set aside yeast in some warm water and watch it as it gets foamy.

2. Combine with rest of ingredients, kneading well.

3. Let rise for an hour.



What you need for the toppings:
  • 100g of creme fraiche
  • 200g of bacon
  • 4 onions
  • Salt and pepper
  • Optional: paprika
1. Roll out dough as thin as you can. The thinner the better on to a baking tray (oiled).

2. Cover with creme fraiche, sprinkle with diced onions, bacon, and add generous amounts of pepper and salt.



3. Bake for 15 minutes at 220C.
