Chilean Completos



During my travels in Chile with a group of friends, our Chilean friend introduced us to this incredible South American hot dog, described by some as the national dish. You can get them at pretty much any corner. Little completo stands are scrawled all over town, within the entire nation.



Avocado is one of my favourite fruits (or vegetables?). It goes amazingly with some lemon juice and a dog in a bun. Give it a try.



What you need:
  • Buns (hot dog buns work)
  • Sausages (vege if you're into that kind of thing)
  • Spring onions
  • Tomatoes
  • Avocados (squishy ripe)
  • Lemons
  • Mayonnaise
  • Salt and pepper to taste
  • Optional: Chili paste/sauce

1. Chop up spring onions, tomatoes and set aside. Mush avocadoes with lemon juice.



2. Grill those dogs. Or fry them.



3. Cut open hot dog buns. I made my own. You can find the recipe here.




4. Now, make sure you get the order right. Bun -> Sausage -> Tomatoes -> Spring onions -> Avocados -> Mayonnaise
