Mi Goreng (Vegetarian)

This is a wonderful little dish. Makes a great filling meal. Nothing like eggs and sweet and sour soy sauce with noodles. This dish became internationally famous through being packaged in little plastic bags as ready-made instant noodles, where you squeeze that nasty looking stuff out of those little packets and get soy sauce all over your favourite shirt.


Turns out making this yourself is simple. Just takes a couple of nice fresh ingredients.

What you need:

  • 400g of egg noodles (or any other kind)
  • Some oil (peanut or sesame work wonders)
  • 1 or more onions
  • 3 cloves of garlic
  • Ginger
  • Spring onions (about 10 - less'll do)
  • Bean sprouts
  • Sweetened soy sauce (original recipe calls for ketjap manis)
  • Chili sauce
  • 2 eggs
  • Optional: tofu
1. Cook noodles, just as it says on the package. Set aside and drain.

2. Fry garlic, onions, ginger in oil. Best to use a wok if you have one. Heat until onions are see through-ish.



3. Add spring onions, bean sprouts and sweetened soy sauce as well as noodles. Keep stirring through, and give it heat, not too much, you don't wanna burn anything. Keep stirring.

4. Pour in whisked eggs and stir some more. Don't let it burn.



My advice: Keep on low to middle heat. Better have thoroughly cooked noodles than burnt ones.
